Phil Porada 472effbb9b grpc: Switch to go-grpc-middleware/providers/prometheus (#7588) ... While investigating #6384, I noticed that [go-grpc-prometheus](https://github.com/grpc-ecosystem/go-grpc-prometheus?tab=readme-ov-file) was deprecated last year and users should switch to [go-grpc-middleware](https://github.com/grpc-ecosystem/go-grpc-middleware) instead.
